Recipes to Enjoy All Year

Although I first got Gluten-Free and Vegan Holidays in an effort to create an all vegan Thanksgiving dinner, I found so many recipes that I use at many times during the year. Like today, for instance, I’m making her Lentil Pâté from the Hanukkah menu. It makes a delicious and gourmet sandwich spread. And the recipe is amazingly easy.

Stuffed Tomatoes with Basil and Forbidden Rice, from her Christmas menu, has become one of my go-to standards for many dinners. I’ve substituted many varieties for rice and found each one just as yummy. Besides being a gourmet taste treat, the presentation of this dish is beautiful. Katzinger’s recipe calls for baking the stuffed tomatoes, but I’ve had great luck with just heating up the stuffing and placing it in a raw tomato shell to serve immediately. Either way, it makes a great addition for dinner.
